Description

Blue cornmeal (medium) is a good source of fiber and protein. Blue cornmeal has a unique dark indigo color with an intense aroma of fresh corn. Blue corn a particularly sweet and flavorful variety of corn will add a fantastic new color to any recipe and is a good alternative to yellow cornmeal. It can be used to replace some or all products made with cornmeal up to 25% flour in the recipe for added texture and flavor. Blue cornmeal makes outstanding tortilla chips. Corn grown in natural conditions and the flour made from it is ideal for making delicious, nutritious pastries. Bob's Red Mill , Blue Cornmeal, Medium Grind

Cooking method: recipe cooking pancakes: 

3/4 cup blue cornmeal4 1 teaspoon salt; 1 tbsp sugar; 1 cup boiling water ; 1 egg; 1/2 cup milk; 2 tbsp. butter, ghee; 3/4 cups of unbleached white flour; 2 teaspoons of baking powder.

In a medium bowl, mix blue cornmeal, salt and sugar.  Add boiling water until all ingredients are moist. Cover with a lid and let stand for a few minutes. In a glass, mix milk, egg and melted butter. Stir the milk mixture with the corn mixture. Mix the flour and baking powder. Heat a large cast iron skillet over medium heat and brush with butter. Use about 2 tablespoons of batter for each pancake. When the entire surface of the pancakes is covered with bubbles, turn over and fry the other side until golden brown.  ;Serve immediately with maple syrup or fruit jam.

Other Ingredients: whole grain blue corn.
