Bob's Red Mill, Stone Ground White Rice Flour
Cooking : muffins recipe: 1 cup white rice flour; 2 tablespoons of tapioca flour; 6 tbsp. potato starch; 1 teaspoon xanthan gum; 1/4 teaspoon baking powder; 1/4 teaspoon baking soda; 1/3 teaspoon sea salt; 6 tbsp. butter; 1 cup sugar; 2 eggs; 1 teaspoon vanilla; 1 3/4 teaspoon grated lemon zest; 3/4 cup buttermilk.
Preheat oven to 190°; . Mix together the flour, starch, xanthan gum, baking powder, baking soda and salt. Using an electric mixer and separate the cream, butter and sugar on medium speed until light and fluffy. Beat the eggs separately. Add vanilla extract and grated lemon zest. On low speed, combine dry ingredients and butter mixture, alternating with buttermilk, beginning and ending with dry ingredients until smooth. Pour batter into prepared pan and smooth over top. Bake for 50 minutes or until golden brown (cake tester is inserted into the center and comes out clean). Chill for 5 minutes, then remove from the pan and cool on a rack. 10 servings.
