Description

Semolina flour (semolina) is made from the finest durum wheat. It is typically used to make pasta and to make excellent breads. It is an indispensable ingredient for homemade Italian-style pasta, noodles, lasagna, fettuccine and other flour-based pasta. Semolina contains an exceptionally high percentage of gluten, which allows the pasta string to stretch and not fall apart during cooking. It is preferable to make a pasta using 50% semolina and 50% unbleached white flour. Semolina can also be added to pizza dough and other recipes.

Bob's Red Mill , Semolina Flour

Cooking method: pasta recipe

1 1/2 cups semolina flour; 1/2 teaspoon salt; 2 eggs or 3 egg whites; 2 tbsp. water; 2 tbsp olive oil.

Mix semolina flour and salt. Add beaten eggs (or egg white), water and oil. Mix to make a stiff dough. Knead for 10 minutes or until the dough becomes elastic. Wrap the dough in a towel or place in a plastic bag and leave for 20 minutes. On a lightly floured surface, roll out to desired thickness and cut as desired. Bring a large pot of water containing 1/2 teaspoon. oil to a boil. Add pasta and cook until done. When making lasagna, you don't need to boil the noodles. Add directly to your recipe. Serve with sauce, pesto, olive oil or butter, pepper and Parmesan cheese.

Other Ingredients: fortified durum flour (durum wheat, iron, niacin, thiamin, riboflavin, folic acid).
