Turmeric's warm aroma, vibrant color, and ginger/pungent, pepper-like flavor are a staple of cooking throughout almost all of Asia. Turmeric is best known as the spice that gives curry powder its distinct, specific color.
Turmeric is native to Southeast Asia but widely cultivated in India and Indonesia. Alleppey, a region and city in the extreme southwestern part of India, produces two grades of turmeric sold in the US market. "Fingers" (Fingers) are appendages separated from the main rhizome and broken into pieces 1-3 inches long (2.54 - 7.62 cm). 'Fingers' have a higher curcumin content (hence a better color), more flavor (due to their volatile oil content) and are the best type of turmeric to grind. The "splits and bulbs" class are parts derived from the main root. They are cheaper but tend to be of lower overall quality (taste, evaporating oil, color), more fibrous and difficult to grind.
