Garam Masala is a mixture of spices , common in the cuisines of India, Pakistan, as well as some other Asian countries. It is used alone or with other seasonings. Indian chefs use it primarily to flavor meats and poultry, and they most often add it just before serving food rather than during cooking. Recipes for masala vary by region, as well as by individual chefs who come up with a new masala for each dish as needed. There are many recipes throughout India according to regional and personal taste. The components of the mixture are fried and then combined together. Suggested Use
Add to soups and stews. Rub meat and poultry before roasting or sprinkle before serving. Combine dhal with cooked lentils for a simple Indian soup. Mix with a small amount of water until a thick mass is formed. Serve as a sauce for meat, fish and poultry dishes. Mix with softened butter or sprinkle over cooked green beans, parsnips, potatoes, carrots, or squash. Add to sour cream or yogurt to make a dip, or sprinkle over baked potatoes. Add to onion-based meat and poultry sauces. Add to pilaf and other cereal dishes. Whip up a refreshing Indian raita by mixing sliced cucumber with plain yogurt flavored with garam masala. Serve with spicy dishes.
